Peanut butter and chocolate is a classic classic combination which can be found in extreme amounts in this classic classic cookie- Peanut Butter Kiss Cookies. This is probably about the easiest peanut butter/chocolate cookie to make but it makes a wonderful presentation and has a very strong peanut butter and chocolate flavor. In fact, out of all the other complicated peanut butter chocolate cookies I've ever made, I think my peanut butter loving boyfriend likes these the best...go figure!
Peanut Butter Kiss Cookies
-3 C Peanut Butter
-1 C Brown Sugar
-1 C White Sugar
-1 C Powdered Sugar
-1/2 C white sugar for rolling
- Preheat oven to 350 degrees F.
- Combine sugars, peanut butter, and egg with a mixer.
- Shape into 1 inch balls [or use a 1 inch cookie scoop] and roll in white sugar. Place on ungreased cookie sheet. NOTE: If dough is too sticky, refrigerate 1/2 hour or until easy to handle.
- Bake for 10 minutes. Remove cookies from oven. Press a chocolate kiss into the center of each warm cookie. I found that this doesn't make the kiss stick to the cookie rolled in sugar though so after you press the kisses into the cookies, wait a few seconds and then press it down again so it melts onto the cookie. It will take a while [20 min- 30 min?] for the kisses to reharden because the heat from the cookie melts them after a while. be careful not to touch them while they are still melty!
